Usually, when I start my blog, I don’t know what I am going to say!

This is what it looks like in my world today! The other day I promised you my lazy woman’s fudge recipe, and since this looks like a good day for some sweetness, here it is! I call it my “Lazy Woman’s” recipe because I don’t enjoy standing in front of the stove watching and stirring.....anything! So, this is made in the microwave and you do have to stir it, three times! And it turns out very well-have made it for years!

Microwave Fudge

(Makes enough to fill two pie tins or one 9x13 pan)

3C sugar

3/4 C butter

2/3C evaporated milk

12 oz (2 C) chocolate chips (use real chocolate chips)

7 oz jar marshmallow creme

1 tsp vanilla

(nuts if you like)

Melt butter in large microwave bowl, add sugar and milk, mix.

Microwave 3 minutes on high - stir

Microwave 2 minutes stir

Microwave 3 minutes stir

Microwave 2 1/2 minutes and stir in chocolate chips, mm creme, vanilla and nuts until blended -pour into greased pan/s.

2# Fudge, just like that!

As long as I am channeling Betty Crocker this morning, here is my Grandma Anderson’s sister, Aunt Byrt’s Cracker Jacks!

6 quarts popped corn

1 C peanuts (optional)

2C brown sugar.

1C butter

1/2C white Karo syrup

1 tsp salt

Boil the above 4 ingredients 5 minutes stirring. Remove from heat and add 1 tsp soda. Pour over popped corn and peanuts. Roast at 200 degrees for one hour stirring every 15 minutes.

This is very hard to stop eating, so I don’t make it very often, and if I do, only for Christmas!

I am hoping to get my tree decorated this weekend, I have my lights up outside! I see so many beautifully decorated Christmas trees on Facebook! Ours will be a badlands cedar brought to us by our grandchildren and decorated with multi color lights, ornaments gathered over 50 years,

Sunset Thursday evening!
